Super Fast & Easy Chicken Salad
We are finally getting some relief from the heat here in the mid-west so I've been able to get outside more and ENJOY summer! This whole being pregnant during the summer thing isn't easy. I will be 21 weeks tomorrow so I love getting out and walking or just playing in the yard with my current little guy. The heat was making that tough. What are your favorite summer activities? I'd love to hear in the comments below. Anyway, since I know we are all super busy is the summer I love quick and easy recipes to keep our eating on track instead of eating out! So, here is one of my favorites I wanted to share. (This from the girl that hates to cook and is a pretty picky eater, so if I"m recommending it that means it is super good and super easy lol)
Chicken Salad (served on multi-grain crackers or sandwhich thin buns)
2 large cans chicken breast
1 can watered chestnuts
1 cup light mayo
1 cup light sour cream
1 package knorr vegetable soup/dip mix
Directions:
Chop the chicken breast and watered chestnuts
Mix all ingredients in a bowl
Chill for 1-2 hours
Serve as a sandwhich or on crackers
I normally do NOT like chicken salad, but I can eat this recipe all day long! I love it and I hope you will enjoy it too!
