Quick & Easy Fruit Parfait
With summer well on the way (only a few more days until my summer vacation officially begins) I fully intend to enjoy tasty treats with my toddler (2). With that being said I NEED to make sure our snacking stays focused on reaching our daily needs in fruits and veggies. Although this "recipe" is not a new concept or anything difficult to come up with, I decided I'd share it anyway! If you are like me at all sometimes you forget about the "simple" things and just need a little reminder!
Ingredients:
1 cup sliced strawberries
1 large sliced banana
2 cups low fat vanilla or strawberry yogurt
2 cups low fat granola
Preparation:
In 4 glasses, alternately layer the strawberries, yogurt, granola and banana, finishing with a light sprinkling of granola on top. Chill or eat immediately. Strawberries and bananas aren't your favorite fruits? Feel free to "mix it up" and incorporate grapes, blueberries, oranges, pears or anything else that tickles your fancy!
