Quick and Healthy Slow Cooker Salsa Chicken

Two things I look for in recipes are if they are quick (which also means easy) and healthy.  Those two combinations are not always easy to find, but in this recipe I have struck gold!  The best part about this recipe?  It can literally make itself while you are at work, running errands, cleaning house or just relaxing thanks to my favorite tool the slow cooker!  

Ingredients:

Approximately 6 thin cut chicken breasts (unthawed) (2 lbs give or take)

1 tall jar of your favorite salsa (mild, warm or hot)

1 package of tortillas / Lettuce for lettuce wraps to serve when done

*Some people add 1 package of taco seasoning to the mix.  (I haven't tried this yet, but plan to next time.)  

 

Optional toppings when served:

Sour cream (or greek yogurt for a healthier substitution)

Lettuce for toppings or to make a salad

Cheese (I like to use the mexican blend)

Chips (if you want to use the chicken mixture for nachos  

 

Preparation:

Place the chicken in the slow cooker

Top the chicken with salsa

Turn the slow cooker on low for 8 hours

At about 6-7 hours begin to pull apart/ shred the chicken to help absorb some of the extra juices.  

Seve with tortillas or as lettuce wraps with a side of rice.
